Baked Crab Cakes<br>-serves 4-

* 16 oz. Crab Meat
* 2 Tbsp. low fat Mayonnaise
* 1/4 c. minced green onion
* 1/4 c. red pepper
* 1 egg (well beaten)
* 2/3 c. Panco (divide in half)
* 1/4 c. finely chopped Hazelnuts


Saute veggies in microwave. Cool and add mayo and egg. Add crab (check to make sure ALL shell is removed). Mix in 1/3 cup of Panco. Divide Crab mixture into 2 inch balls. Roll each ball into remaining panco and hazelnuts, pressing the coating into the crab cakes. Place on baking dish and bake at 400 degrees for 20-25 minutes.
