* 2 tsp. olive oil
* 2 1/2 lbs Sole filets
* Oregon Pink Shrimp
* cilantro leaves (or other spices, see below)
* zest from 1 large lemon
* juice of 1/2 lemon
* shredded Swiss Cheese or any other mild cheese
Drizzle and spread olive oil in glass baking dish. Place a layer of sole filet, then shrimp, and cilantro leaves. Repeat layers as desired, topping with a layer of shrimp, cilantro, lemon zest and lemon juice. Top with shredded cheese. Bake at 350 degrees for 20 minutes.
Other herbs may be used such as dill, sweet marjoram, lemon oregano, etc. Ground Hazelnuts may also be used as a top layer.
