Perfect Pan Fried Oysters
6-10 oysters per serving

  •  fresh Oysters
  •  eggs
  •  Panco
  •  seasoning to taste

Dip oysters in boiling water for 1-2 minutes. Drain and cool for about 10 minutes. Whip 1 egg per 5 oysters and let oysters rest in egg wash for several minutes. In Ziploc bag, place 2-3 cups Panco with seasoning to taste(we like Pistol River Mushroom Ultimate Seasoning, pepper, and dill). Shake 4-5 oysters at a time, then place them on waxed paper to rest for 15-20 minutes. Pan fry in a small amount of hot olive oil quickly until brown on both sides.
This way of cooking oysters gives tender, firm, and delicious results.

Hi! I am Connie Szymczak. I have lived in Gold Beach almost all my life. My parents moved here when I was just 4-years-old. The logging industry brought my family to this area. My father was a timber faller and there was a lot of logging going on back then. I started working at Fishermen Direct back in 2001. I started out learning how to fillet rockfish and salmon, how to load the smoker, and how to cook big pots of Dungeness crab.
